Date paste presented as a food ingredient

01 · Product definition

More than
ground dates.

Date paste is a processed whole-date ingredient designed to provide sweetness, binding, body and texture. Commercial products differ by raw material, pitting and inspection controls, moisture, consistency, particle profile, additives, thermal treatment and final packaging.

“Date paste”, “date mass”, “minced dates” and “date filling” are not automatically interchangeable. The specification and manufacturing process determine whether two products are commercially comparable.

02 · Functional profile

Where paste
performs.

Qualitative guidance only. Performance depends on the full formulation, processing conditions and confirmed product specification.

03 · Technical qualification

Parameters
to request.

Do not qualify paste from appearance or price alone. Request the current TDS, microbiological criteria and batch documentation.

01

Moisture & consistency

Assess texture, pumpability, spreadability and batch consistency against the process.

02

Pit-fragment control

Confirm pitting, inspection and foreign-matter controls rather than assuming “pit-free” means zero risk.

03

Particle profile

Texture, fibre structure and visible particulates influence filling, bar and bakery performance.

04

Microbiology

Review product-specific limits, methods, sampling and destination or buyer requirements.

05

Additives

Confirm preservatives, processing aids and any declared ingredients in writing.

06

Allergens

Request the allergen statement and cross-contact controls relevant to the production site.

07

Shelf life

Align shelf life with packaging, storage temperature and production date.

08

Certification

Verify current scope for the exact product and producer; never rely on a logo alone.

04 · Applications

Built for
structure.

Date paste is commonly evaluated where a formulation needs sweetness with body or binding.

05 · Pricing logic

Price follows
the specification.

A quoted USD/kg is not comparable until the complete commercial basis is aligned.
